Ingredients
Scale
Bread and Filling
- 8 slices soft white or brioche bread (crusts removed)
- 4 oz cream cheese (softened)
- 1/4 cup blueberry preserves or jam
- 1/2 cup fresh or frozen blueberries
Egg Mixture
- 2 large eggs
- 1/4 cup milk
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
For Cooking and Serving
- 1 tablespoon butter (for cooking)
- Powdered sugar (optional, for serving)
- Maple syrup (optional, for serving)
Instructions
- Prepare the Bread: Flatten each slice of bread with a rolling pin to make it thin and pliable. Spread a thin layer of softened cream cheese over each slice evenly, then add a small spoonful of blueberry preserves on top.
- Add Blueberries and Roll Up: Place a few fresh or frozen blueberries near one edge of the bread slice. Starting from that edge, roll the bread tightly to encase the filling, forming neat roll ups.
- Make the Egg Mixture: In a shallow bowl, vigorously whisk together the eggs, milk, vanilla extract, and ground cinnamon to create a smooth batter for dipping.
- Heat the Skillet: Warm a nonstick skillet over medium heat and melt the butter to prepare for frying the roll ups.
- Dip and Cook: Dip each bread roll up into the egg mixture, ensuring all sides are coated thoroughly. Place the roll ups seam-side down in the skillet first. Cook for 2–3 minutes on each side, turning carefully to evenly brown all sides until the roll ups are golden and crisp.
- Serve: Serve the roll ups warm. Optionally dust with powdered sugar and drizzle with maple syrup to enhance sweetness and presentation.
Notes
- Make ahead by assembling the roll ups and refrigerating before dipping and frying to save time.
- Substitute blueberry preserves with other fruit jams or fresh berries like raspberries or strawberries for variety.
- Ensure the bread is flattened well to prevent splitting when rolling.
- Use a nonstick skillet for easier cooking and flipping.
