Ingredients
Scale
Filling
- 1 cup fresh or frozen blueberries
- 4 oz cream cheese, softened
- 2 tablespoons granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon lemon juice
Egg Rolls
- 8 egg roll wrappers
- 1 tablespoon cornstarch mixed with 1 tablespoon water (for sealing)
- Vegetable oil for frying
- Powdered sugar for dusting (optional)
Instructions
- Prepare the filling: In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon juice. Mix until smooth and creamy. Gently fold in the fresh or frozen blueberries, taking care not to break them.
- Assemble the egg rolls: Lay one egg roll wrapper flat on a clean surface with one corner pointing towards you. Spoon approximately 2 tablespoons of the cream cheese and blueberry filling near the bottom corner of the wrapper. Fold the bottom corner over the filling, fold in the sides tightly, and roll up firmly to form a sealed egg roll. Use the cornstarch slurry to seal the final edge. Repeat with remaining wrappers and filling.
- Heat the oil: Pour about 2 inches of vegetable oil into a deep skillet and heat over medium heat until the oil reaches approximately 350°F (175°C).
- Fry the egg rolls: Fry the assembled egg rolls in batches, turning occasionally, until they are golden brown and crispy on all sides, about 2 to 3 minutes per side.
- Drain and serve: Remove the fried egg rolls with a slotted spoon and drain on paper towels to remove excess oil. Let them cool slightly before dusting with powdered sugar, if desired. Serve warm for best flavor and texture.
Notes
- You can substitute raspberries or chopped strawberries for the blueberries for a different fruity twist.
- For a healthier alternative, bake the egg rolls: brush them lightly with oil and bake at 400°F (200°C) for 15–18 minutes, flipping halfway through until golden and crisp.
