Description

This Black Bean Crunch Wrap Supreme is a delicious and satisfying vegetarian meal that blends seasoned black beans, fresh veggies, and melty cheese inside a crispy tortilla wrap. Perfectly cooked on the stovetop for a golden crunch, it offers a flavorful, easy-to-make dish ideal for a quick weeknight dinner or casual gathering.

Ingredients

Scale

Filling

  • 1 teaspoon olive oil
  • â…“ cup white onion, chopped
  • 1 jalapeño, finely chopped (optional)
  • 2 (15-ounce) cans black beans, drained and rinsed
  • ¾ cup tomato, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • ½ teaspoon salt
  • 2 tablespoons hot sauce (optional)

Assembly

  • 6 large burrito-size tortillas
  • 6 tostadas
  • 6 small fajita-size tortillas (optional, to close the wrap)
  • â…“ cup sour cream (or vegan alternative)
  • 1½ cups shredded cheese (or vegan alternative)
  • 1½ cups romaine lettuce, shredded
  • 1 avocado, sliced thin (optional)

Cooking

  • Cooking spray or additional olive oil for cooking

Instructions

  1. Prepare the Filling: Heat olive oil in a large skillet over medium heat. Add the chopped white onion and sauté for about 3 minutes until translucent.
  2. Add Ingredients: Stir in finely chopped jalapeño (if using), drained black beans, chopped tomato, garlic powder, chili powder, paprika, cumin, salt, and hot sauce. Mix thoroughly.
  3. Simmer Filling: Let the mixture simmer gently for a few minutes until heated through and flavors meld. Remove from heat once done.
  4. Assemble the Crunch Wraps: Lay a large burrito-size tortilla flat on a clean surface. Spoon a generous amount of the black bean filling into the center, then top with shredded cheese, sour cream, shredded lettuce, and sliced avocado.
  5. Add Crunch and Fold: Place a tostada on top of the filling, pressing it gently. Optionally place a small fajita-size tortilla on top to help close the wrap. Fold the edges of the large tortilla up and over the fillings to enclose everything securely.
  6. Cook the Crunch Wraps: Heat a clean skillet over medium heat and coat it lightly with cooking spray or olive oil. Place the assembled wrap seam-side down on the skillet. Cook for 2 to 3 minutes until the tortilla is golden brown.
  7. Flip and Cook Other Side: Carefully flip the wrap and cook the other side for an additional 2 to 3 minutes until golden and crisp. Repeat this process with the remaining wraps.
  8. Serve: Remove the crunch wraps from the skillet, slice in half if desired, and serve warm for a satisfying meal.

Notes

  • You can make this recipe vegan by using vegan cheese and sour cream alternatives.
  • Jalapeño and hot sauce are optional but add a nice kick if you like heat.
  • Using a small tortilla to close the wrap helps keep everything securely inside.
  • For extra crispiness, lightly brush the tortilla with olive oil before cooking.
  • Serve with salsa, guacamole, or pico de gallo for extra flavor.
