Description

Beef Lombardi is a hearty and comforting casserole featuring layers of seasoned ground beef, creamy cheeses, and tender egg noodles, all baked to perfection. This delicious dish is a crowd-pleaser and perfect for a family dinner.

Ground Beef Mixture:

  • 2 pounds ground beef
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (6 oz) tomato paste
  • 1 can (15 oz) tomato sauce
  • 1 teaspoon sugar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Other Ingredients:

  • 8 oz egg noodles
  • 1 cup sour cream
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat oven and Prepare Beef Mixture: Preheat oven to 350°F (175°C). Cook ground beef and onion in a skillet until browned. Add garlic, diced tomatoes, tomato paste, tomato sauce, sugar, Italian seasoning, salt, and pepper. Simmer for 15 minutes.
  2. Cook Noodles and Prepare Cheese Mixture: Cook egg noodles; drain. Mix sour cream and cream cheese until smooth.
  3. Assemble and Bake: In a baking dish, layer noodles, sour cream mixture, and beef sauce. Repeat layers and top with cheddar cheese. Bake for 30-35 minutes.
  4. Serve: Garnish with parsley before serving.

Notes

  • This casserole can be assembled ahead and refrigerated overnight or frozen for up to 3 months.
  • Thaw before baking.
  • For a little heat, add red pepper flakes to the sauce.
