Description

This Beef Guacamole Grilled Cheese Sandwich combines rich, seasoned ground beef with creamy guacamole and melted cheddar and pepper jack cheeses, all toasted to golden perfection on buttery sourdough bread. It’s a flavorful twist on classic grilled cheese that delivers a satisfying Tex-Mex-inspired main course perfect for lunch or dinner.

Ingredients

Scale

Beef Mixture

  • 1 lb ground beef
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Cheese and Bread

  • 8 slices bread (sourdough or your choice)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper jack cheese

Additional Ingredients

  • 1 cup guacamole (homemade or store-bought)
  • 2 tablespoons butter, softened

Instructions

  1. Cook the Beef: In a skillet over medium heat, cook the ground beef with chili powder, cumin, garlic powder, salt, and pepper until browned and fully cooked, about 6–8 minutes. Drain any excess fat and set the beef aside.
  2. Prepare the Bread: Butter one side of each slice of bread. Place four slices butter side down on a flat surface to serve as the sandwich bases.
  3. Assemble the Sandwiches: Layer each bread slice with shredded cheddar cheese, followed by a scoop of the seasoned beef, a generous spoonful of guacamole, then a layer of shredded pepper jack cheese.
  4. Top and Butter: Place the remaining bread slices on top, butter side up, to complete each sandwich.
  5. Grill the Sandwiches: Heat a skillet or griddle over medium heat. Cook the sandwiches for 3 to 4 minutes per side, pressing slightly with a spatula, until the bread is golden brown and the cheese has melted thoroughly.
  6. Serve: Remove from heat and serve immediately for the best melty and flavorful experience.

Notes

  • Add sliced tomatoes or pickled jalapeños inside the sandwich for extra flavor and a spicy kick.
  • Use pre-cooked taco meat to reduce cooking time.
  • If you prefer your guacamole fresh and cool, add it after grilling instead of before.
