- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika

- 1/4 tsp black pepper
- 1 (4 oz) can diced green chiles
For Assembly:
- 1 (15 oz) can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8 flour tortillas (8-inch)
- Chopped cilantro and sour cream for serving (optional)
Instructions
- Preheat the Oven: Preheat the oven to 375°F.
- Sauté Onion and Garlic: In a skillet, sauté diced onion in olive oil until softened. Add garlic and cook briefly.
- Cook Beef: Add ground beef, breaking it apart and browning. Drain excess grease if needed.
- Season and Add Chiles: Stir in cumin, chili powder, paprika, salt, pepper, and green chiles. Cook briefly.
- Prepare Tortillas: Spoon beef mixture into tortillas, add cheese, roll tightly, and place in a baking dish.
- Add Sauce and Cheese: Pour enchilada sauce over tortillas, top with remaining cheese.
- Bake: Bake for 20–25 minutes until cheese is melted.
- Serve: Let rest, garnish with cilantro and sour cream.
