  • 1 (15 oz) can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 8 flour tortillas (8-inch)
  • Chopped cilantro and sour cream for serving (optional)

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F.
  2. Sauté Onion and Garlic: In a skillet, sauté diced onion in olive oil until softened. Add garlic and cook briefly.
  3. Cook Beef: Add ground beef, breaking it apart and browning. Drain excess grease if needed.
  4. Season and Add Chiles: Stir in cumin, chili powder, paprika, salt, pepper, and green chiles. Cook briefly.
  5. Prepare Tortillas: Spoon beef mixture into tortillas, add cheese, roll tightly, and place in a baking dish.
  6. Add Sauce and Cheese: Pour enchilada sauce over tortillas, top with remaining cheese.
  7. Bake: Bake for 20–25 minutes until cheese is melted.
  8. Serve: Let rest, garnish with cilantro and sour cream.
