Instructions

  3. Warm Tortillas: Wrap the tortillas in a damp towel and microwave for 30–40 seconds to make them pliable and easier to roll.
  4. Assemble Enchiladas: Spread about 2 tablespoons of the bean mixture in the center of each tortilla. Sprinkle 1 tablespoon of shredded cheese on top, then roll the tortilla tightly around the filling.
  5. Prepare Baking Dish: Spread a few spoonfuls of the enchilada sauce on the bottom of a 9Ă—13-inch baking dish to prevent sticking and add flavor.
  6. Arrange Enchiladas: Place the rolled tortillas seam side down in the prepared baking dish to keep them sealed during baking.
  7. Add Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle with the remaining shredded cheese for a cheesy topping.
