Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C) to prepare for baking the enchiladas.
- Prepare Bean Mixture: In a medium bowl, combine the refried beans with garlic powder, cumin, chili powder, salt, and pepper. Stir in the diced onions if using, to add extra flavor.
- Warm Tortillas: Wrap the tortillas in a damp towel and microwave for 30–40 seconds to make them pliable and easier to roll.
- Assemble Enchiladas: Spread about 2 tablespoons of the bean mixture in the center of each tortilla. Sprinkle 1 tablespoon of shredded cheese on top, then roll the tortilla tightly around the filling.
- Prepare Baking Dish: Spread a few spoonfuls of the enchilada sauce on the bottom of a 9Ă—13-inch baking dish to prevent sticking and add flavor.
- Arrange Enchiladas: Place the rolled tortillas seam side down in the prepared baking dish to keep them sealed during baking.
- Add Sauce and Cheese: Pour the remaining enchilada sauce evenly over the rolled tortillas, then sprinkle with the remaining shredded cheese for a cheesy topping.
- Bake Covered: Cover the dish with foil and bake in the preheated oven for 20 minutes to heat through and meld flavors.
- Bake Uncovered: Remove the foil and bake for an additional 10 minutes until the cheese is melted, bubbly, and slightly golden.
