Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream Butter and Sugars: In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Add Wet Ingredients: Beat in the egg, vanilla extract, and mashed bananas.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, and salt.
- Mix Everything Together: Gradually add the dry ingredients to the banana mixture, mixing until just combined. Stir in oats, walnuts, and chocolate chips if desired.
- Bake: Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10–12 minutes or until edges are lightly golden.
- Cool and Serve: Allow cookies to cool on baking sheets for 5 minutes before transferring to a wire rack.
Notes
- For chewier cookies, slightly underbake them.
- Walnuts and chocolate chips can be swapped for raisins or omitted.
