Description

This Balsamic Chicken Caprese Salad combines juicy grilled chicken breast with fresh mozzarella, ripe avocado, cherry tomatoes, and mixed greens, all drizzled with a tangy balsamic glaze and extra virgin olive oil. Inspired by classic Italian flavors, this healthy and vibrant salad is perfect for a light lunch or dinner, delivering a balanced mix of protein, healthy fats, and crisp fresh vegetables.

Ingredients

Scale

For the Chicken:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

For the Salad:

  • 6 cups mixed greens or arugula
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella, sliced or in small balls
  • 1 avocado, sliced
  • 1/4 cup fresh basil leaves

For the Dressing:

  • 2 tablespoons balsamic glaze (store-bought or homemade)
  • 1 tablespoon extra virgin olive oil (for drizzling)

Instructions

  1. Preheat the Grill: Heat your grill or grill pan over medium-high heat to prepare for cooking the chicken.
  2. Season the Chicken: Rub the chicken breasts with olive oil, Italian seasoning, salt, and black pepper, ensuring even coating on all sides.
  3. Grill the Chicken: Place the chicken on the grill and cook for 5–6 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove from the grill and let it rest for 5 minutes to retain juices.
  4. Slice the Chicken: Once rested, slice the grilled chicken breasts into strips for serving.
  5. Assemble the Salad: On a large platter or individual plates, arrange the mixed greens. Top evenly with cherry tomatoes, mozzarella slices or balls, avocado slices, and grilled chicken strips. Scatter fresh basil leaves over the top.
  6. Dress the Salad: Drizzle the balsamic glaze and extra virgin olive oil over the assembled salad just before serving to add flavor and moisture.

Notes

  • For more intense flavor, marinate the chicken in balsamic vinaigrette for 30 minutes before grilling.
  • Avocado can be swapped with cucumber for a different texture and taste.
  • Add toasted pine nuts for a crunchy element.
