Salmon and Marinade

  • 4 salmon fillets (about 6 oz each)
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/4 cup pineapple juice
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 2 teaspoons minced garlic
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste

Garnish

  • Chopped green onions
  • Sesame seeds

Instructions

  1. Preheat the Oven: Set your oven to 375°F (190°C) to prepare it for baking the salmon.
  2. Prepare the Marinade: In a small bowl, whisk together pineapple juice, soy sauce, honey, olive oil, minced garlic, grated ginger, and crushed red pepper flakes until well combined.
  3. Season and Arrange Salmon: Place the salmon fillets in a baking dish. Season them with salt and black pepper to taste.
  4. Marinate and Add Pineapple: Pour the marinade evenly over the salmon fillets. Scatter the pineapple chunks on top of and around the salmon in the baking dish.
  5. Cover and Bake: Cover the baking dish with aluminum foil and bake for 15 to 18 minutes to cook the salmon gently.
  6. Finish Baking Uncovered: Remove the foil, then bake for an additional 5 to 7 minutes or until the salmon is fully cooked and flakes easily with a fork.
  7. Serve and Garnish: Spoon some of the pan juices over the salmon. Garnish with chopped green onions and sesame seeds before serving for added flavor and presentation.
