Description

These Baked Cauliflower Bites are a crispy, flavorful, and healthier alternative to traditional fried snacks. Coated in a seasoned breadcrumb and Parmesan mixture and baked to golden perfection, they make a perfect appetizer or side dish. Easy to prepare and customizable with spices, they cater to both gluten-free and vegetarian diets when using suitable ingredients.

Ingredients

Scale

Cauliflower

  • 1 medium cauliflower head, cut into bite-sized florets

Coating

  • 1/2 cup (60g) all-purpose flour (or chickpea flour for gluten-free)
  • 1/2 cup (50g) breadcrumbs (use gluten-free breadcrumbs if needed)
  • 1/4 cup (60g) grated Parmesan cheese (optional, for extra flavor)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional, for a smoky flavor)
  • Salt and pepper to taste
  • 2 large eggs, beaten
  • 2 tablespoons olive oil (for drizzling or spraying)

Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking and to help with crisping.
  2. Prepare the Cauliflower: Cut the cauliflower into bite-sized florets making sure the pieces are roughly uniform in size to ensure even cooking and crispness.
  3. Prepare the Coating: In a shallow bowl, combine the flour, breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well to create a evenly seasoned coating mixture. In a separate bowl, beat the eggs thoroughly.
  4. Coat the Cauliflower: Dip each cauliflower floret into the beaten eggs, ensuring it’s fully coated. Then dip the floret into the breadcrumb mixture, pressing gently so the coating adheres well. Place each coated floret on the prepared baking sheet in a single layer without crowding.
  5. Bake the Cauliflower Bites: Drizzle or spray the florets lightly with olive oil to promote browning and crispiness. Bake in the preheated oven for 25-30 minutes, flipping the bites halfway through to ensure even golden color and crisp texture.
  6. Serve: Remove from oven once crispy and golden. Serve immediately with your favorite dipping sauces such as ranch, buffalo sauce, or a tangy yogurt dip for added flavor.

Notes

  • For a gluten-free version, use chickpea flour instead of all-purpose flour and gluten-free breadcrumbs.
  • Parmesan cheese is optional but adds a nice cheesy depth; omit for a vegetarian or vegan adaptation or substitute with nutritional yeast for vegan option.
  • Ensure cauliflower florets are similar sizes to cook evenly.
  • You can customize the seasoning by adding chili powder, cumin, or your favorite herbs.
  • Use olive oil spray for a lighter coating instead of drizzling to reduce fat content slightly.
  • Consume immediately for best crispiness as baked items can soften when cooled.
