Additional Layers:

  • 1 (15-ounce) can refried beans
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can enchilada sauce
  • 8 large flour tortillas
  • 2 cups shredded Mexican blend cheese
  • 1/4 cup chopped green onions
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook beef mixture: In a skillet, cook ground beef and onion, then add garlic, taco seasoning, and water. Stir in refried beans, diced tomatoes, and black beans.
  3. Layer ingredients: Spread enchilada sauce in the baking dish. Layer tortillas, beef mixture, cheese, and sauce. Repeat layers and top with cheese.
  4. Bake: Cover with foil and bake for 20 minutes, then uncover and bake an additional 10 minutes until cheese is melted.
