Description

Deliciously wholesome baked apple cinnamon oatmeal cups, perfect for a nutritious and convenient breakfast or snack. Made with rolled oats, fresh diced apples, warm spices, and a touch of natural sweetness, these muffin-style oatmeal cups are easy to prepare and packed with fiber and flavor.

Ingredients

Scale

Dry Ingredients

  • 2 cups rolled oats
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 cup chopped walnuts or pecans (optional)

Wet Ingredients

  • 1 cup diced apples (Granny Smith or Honeycrisp)
  • 1 cup almond milk (or any milk of choice)
  • 2 tbsp maple syrup or honey
  • 1/2 cup applesauce

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners to prevent sticking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and optional chopped nuts, stirring to evenly distribute the spices and nuts.
  3. Prepare Wet Mixture: In a separate bowl, whisk together the almond milk, maple syrup (or honey), and applesauce until fully blended to create a smooth wet mixture.
  4. Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring thoroughly until all the oats are moistened and the mixture is well combined.
  5. Add Apples: Gently fold in the diced apples to incorporate them evenly without breaking them down too much.
  6. Fill Muffin Cups: Spoon the oatmeal mixture into the prepared muffin tin cups, pressing down lightly to compact the mixture slightly for shape.
  7. Bake: Bake in the preheated oven for 20-25 minutes, or until the oatmeal cups are golden brown on top and a toothpick inserted into the center comes out clean.
  8. Cool and Serve: Allow the baked oatmeal cups to cool in the tin for about 5 minutes before carefully removing them. Serve warm or at room temperature.

Notes

  • Use Granny Smith apples for a tart flavor or Honeycrisp for sweetness.
  • Walnuts or pecans add a nice crunch but can be omitted for a nut-free version.
  • Substitute maple syrup with honey or agave syrup as preferred.
  • Use dairy or other plant-based milk alternatives as desired.
  • These cups can be stored in an airtight container in the refrigerator for up to 5 days.
  • Reheat in the microwave for 20-30 seconds before serving for a warm treat.
