Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with paper liners to prevent sticking.
- Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and optional chopped nuts, stirring to evenly distribute the spices and nuts.
- Prepare Wet Mixture: In a separate bowl, whisk together the almond milk, maple syrup (or honey), and applesauce until fully blended to create a smooth wet mixture.
- Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring thoroughly until all the oats are moistened and the mixture is well combined.
- Add Apples: Gently fold in the diced apples to incorporate them evenly without breaking them down too much.
- Fill Muffin Cups: Spoon the oatmeal mixture into the prepared muffin tin cups, pressing down lightly to compact the mixture slightly for shape.
