Instructions

  3. Prepare Apricots: While the dough chills, wash and slice fresh apricots into wedges, setting them aside for the filling.
  4. Roll Out Dough: Lightly flour a clean surface and roll out the chilled dough to fit your tart pan. Gently press it into the bottom and up the sides of the pan, ensuring an even layer without stretching the dough.
  5. Make Filling: In a separate bowl, whisk together the eggs, remaining ¼ cup sugar, vanilla extract, and a pinch of salt until the mixture is smooth and slightly frothy. Fold in the sliced apricots carefully to distribute them evenly.
