Description

This classic Apple Pie with Lattice Crust features tender, cinnamon-spiced apples baked inside a flaky, buttery double crust with a beautiful lattice top. Perfect for celebrating holidays or enjoying a comforting dessert any time of the year, this homemade apple pie offers a perfect balance of sweet and tart flavors with a hint of warm spices.

Ingredients

Scale

For the filling:

  • 67 cups peeled and sliced apples (Granny Smith or Honeycrisp)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1/4 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 1 tablespoon unsalted butter (cut into small pieces)

For the crust:

  • 1 double pie crust (homemade or store-bought)
  • 1 egg (beaten, for egg wash)
  • 1 tablespoon coarse sugar (optional, for topping)

Instructions

  1. Prepare the oven and apples: Preheat the oven to 400°F (200°C). In a large mixing bowl, toss the peeled and sliced apples with lemon juice to prevent browning and add brightness.
  2. Mix filling ingredients: Add granulated sugar, brown sugar, flour, cinnamon, nutmeg, and salt to the apples. Mix thoroughly until all apple slices are evenly coated to ensure a well-spiced and thickened filling.
  3. Prepare the bottom crust: Roll out one pie crust and fit it into a 9-inch pie dish, trimming any overhang for a neat shape.
  4. Add the filling and butter: Pour the apple mixture into the crust, spreading evenly. Dot the filling with small pieces of unsalted butter to add richness and flavor during baking.
  5. Create the lattice crust: Roll out the second pie crust and cut into 1/2-inch-wide strips. Arrange the strips in a classic lattice pattern over the filling, then trim and crimp the edges to seal the pie securely.
  6. Apply egg wash and sugar: Brush the lattice and edges with beaten egg for a glossy finish. Optionally, sprinkle coarse sugar on top for added texture and sweetness.
  7. Bake the pie: Place the pie on a baking sheet to catch drips and bake in the preheated oven for 45–50 minutes until the crust is golden brown and the filling is bubbly. Cover the edges with foil if they brown too quickly during the last 15 minutes to prevent burning.
  8. Cool before serving: Remove the pie from the oven and let it cool for at least 2 hours to allow the filling to set properly for clean slices and the best flavor.

Notes

  • For a richer, more complex flavor, mix in a tablespoon of apple cider or vanilla extract to the filling mixture.
  • This apple pie is best served warm, ideally with a scoop of vanilla ice cream for a classic dessert experience.
