Description

These Apple, Brie, and Honey Tarts are a delightful appetizer combining the crisp sweetness of apples, creamy Brie cheese, and a drizzle of honey on flaky puff pastry. Perfect for fall gatherings or a sophisticated snack, they offer a balanced blend of fruity, creamy, and lightly herbal flavors with fresh thyme enhancing the aroma.

Ingredients

Scale

Pastry

  • 1 sheet frozen puff pastry, thawed

Filling

  • 1 medium apple (such as Honeycrisp or Gala), thinly sliced
  • 4 oz Brie cheese, rind removed and sliced
  • 1 tablespoon fresh thyme leaves (optional)

Topping and Finish

  • 2 tablespoons honey
  • 1 egg, beaten (for egg wash)
  • Flour for dusting

Instructions

  1. Preheat oven and prepare baking sheet: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Prepare puff pastry: Lightly dust a clean surface with flour, roll out the thawed puff pastry to smooth out creases, and then cut it into 6 equal rectangles.
  3. Score pastry edges: Place the cut rectangles on the baking sheet and score a ½-inch border around each rectangle by lightly cutting the pastry without cutting all the way through. This border will help create a raised edge when baked.
  4. Assemble tarts: Inside the scored border on each rectangle, layer 2–3 thin apple slices followed by 1–2 slices of Brie cheese to create a rich, sweet, and creamy filling.
  5. Apply egg wash: Brush the edges of the pastry rectangles with beaten egg to give the crust a shiny, golden finish once baked.
  6. Bake: Bake the tarts in the preheated oven for 18–20 minutes or until the pastry is puffed and golden brown.
  7. Finalize and serve: When the tarts are still warm, drizzle with honey and sprinkle with fresh thyme leaves if desired. Serve warm or at room temperature for best flavor.

Notes

  • For a savory twist, add a small pinch of sea salt or cracked black pepper before baking to balance the sweetness.
  • Pears can be substituted for apples for a different but equally delicious flavor.
