- Prepare the egg mixture: In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined and slightly frothy.
- Add mix-ins: Stir in shredded cheddar cheese, cooked bacon or diced ham if using, chopped bell pepper, and chopped spinach until evenly distributed throughout the egg mixture.
- Prepare cooking vessels: Lightly spray silicone muffin cups or ramekins with cooking spray to prevent sticking and place them inside the air fryer basket.
- Fill the cups: Pour the egg mixture evenly into each cup, filling approximately 3/4 full to allow space for the egg bites to expand as they cook.
- Cook the egg bites: Set the air fryer temperature to 300°F (150°C) and cook the egg bites for 10 to 13 minutes, or until they are set, firm, and no longer jiggle in the center.
- Cool and serve: Let the egg bites cool for a couple of minutes before removing them from the cups. Serve warm or store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or air fryer as desired.
