Mashed Potato Mixture

  • 2 cups mashed potatoes (chilled and firm)
  • 1 cup shredded mozzarella or cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 egg, beaten
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste

Coating and Cooking

  • 1 cup breadcrumbs (panko or regular)
  • Cooking spray or a little olive oil

Instructions

  1. Combine ingredients: In a bowl, mix the chilled mashed potatoes, shredded mozzarella or cheddar cheese, grated Parmesan cheese, beaten egg, garlic powder, onion powder, salt, and pepper until fully combined.
  2. Shape into balls: Take a spoonful of the mixture and roll it into a ball approximately 1-2 tablespoons per ball. Repeat until all the mixture is formed into balls.
  3. Coat with breadcrumbs: Roll each mashed potato ball in breadcrumbs, pressing gently so they are well-coated all around for a crispy exterior.
  4. Preheat air fryer: Preheat your air fryer to 375°F (190°C) to ensure even cooking and crisping.
  5. Prepare air fryer basket: Lightly spray the air fryer basket with cooking spray or drizzle with a little olive oil to prevent sticking. Arrange the potato balls in a single layer, leaving space between each ball for air circulation.
